Ingredients

  • 4 large yellow onions thinly sliced
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cups beef broth low sodium
  • 2 cups chicken broth low sodium
  • 1/2 cup dry white wine
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper freshly ground
  • 1 teaspoon fresh thyme leaves
  • 4 slices baguette toasted
  • 2 cups Gruyère cheese grated

Instructions

  1. 1 In a large pot, melt butter with olive oil over medium heat.
  2. 2 Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 25-30 minutes.
  3. 3 Sprinkle sugar and salt over the onions, continue to cook for another 5 minutes to deepen the caramelization.
  4. 4 Add the white wine to the pot, scraping up any browned bits from the bottom of the pot, and simmer until the wine is mostly evaporated.
  5. 5 Stir in the beef broth, chicken broth, thyme, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6 Preheat the oven broiler. Ladle the soup into oven-safe bowls and place on a baking sheet.
  7. 7 Place a toasted baguette slice on top of each bowl of soup and sprinkle generously with grated Gruyère cheese.
  8. 8 Broil the soup in the oven until the cheese is bubbly and golden brown, about 3-5 minutes. Serve hot.
