1 unit egg yolk
2-3 tablespoons ice water
Almond Filling
1 cup almond flour
1/2 cup sugar
1/2 cup unsalted butterroom temperature
2 units eggsbeaten
1 teaspoon vanilla extract
Topping
3 units ripe pearspeeled, cored, and sliced
1/4 cup maple syrup
1/4 cup sliced almondstoasted
Instructions
1In a large bowl, combine sifted flour and sugar for the crust. Add the cold, diced butter and mix until the mixture resembles coarse crumbs.
2Add the egg yolk and ice water gradually, mixing until the dough just comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
3Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and fit it into a 9-inch tart pan. Trim excess dough and prick the bottom with a fork. Blind bake for 15 minutes.
4To prepare the almond filling, beat together the almond flour, sugar, and room temperature butter until smooth. Gradually add the beaten eggs and vanilla extract and mix until well combined.
5Spread the almond filling evenly over the pre-baked tart crust.
6Arrange the pear slices decoratively over the almond filling. Brush with maple syrup, then sprinkle with toasted sliced almonds.
7Bake the tart for 35-40 minutes, or until the filling is set and the pears are tender. Allow to cool slightly before serving.
