Ingredients

Crust

  • 1 1/4 cups all-purpose flour sifted
  • 1/4 cup sugar
  • 1/2 cup unsalted butter cold, diced
  • 1 unit egg yolk
  • 2-3 tablespoons ice water

Almond Filling

  • 1 cup almond flour
  • 1/2 cup sugar
  • 1/2 cup unsalted butter room temperature
  • 2 units eggs beaten
  • 1 teaspoon vanilla extract

Topping

  • 3 units ripe pears peeled, cored, and sliced
  • 1/4 cup maple syrup
  • 1/4 cup sliced almonds toasted

Instructions

  1. 1 In a large bowl, combine sifted flour and sugar for the crust. Add the cold, diced butter and mix until the mixture resembles coarse crumbs.
  2. 2 Add the egg yolk and ice water gradually, mixing until the dough just comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  3. 3 Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and fit it into a 9-inch tart pan. Trim excess dough and prick the bottom with a fork. Blind bake for 15 minutes.
  4. 4 To prepare the almond filling, beat together the almond flour, sugar, and room temperature butter until smooth. Gradually add the beaten eggs and vanilla extract and mix until well combined.
  5. 5 Spread the almond filling evenly over the pre-baked tart crust.
  6. 6 Arrange the pear slices decoratively over the almond filling. Brush with maple syrup, then sprinkle with toasted sliced almonds.
  7. 7 Bake the tart for 35-40 minutes, or until the filling is set and the pears are tender. Allow to cool slightly before serving.
