Ingredients

1 teaspoon dried lavender
1 tablespoon water
Instructions
1In a large bowl, combine sifted flour, sugar, and salt. Add the cold cubed butter and mix using a pastry blender until the mixture resembles coarse crumbs.
2Gradually add ice water, a tablespoon at a time, mixing with a fork until the dough begins to hold together. Do not overmix.
3Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
4Preheat the oven to 400°F (200°C). On a floured surface, roll out the dough into a rough circle about 12 inches in diameter.
5Transfer the dough to a parchment-lined baking sheet. Sprinkle the almond flour over the center, leaving a 2-inch border.
6Arrange the sliced apples over the almond flour, overlapping slightly. Sprinkle with cinnamon and toasted almonds.
7Fold the edges of the dough over the apples, pleating as needed. Brush the crust with honey to give it a golden finish.
8Bake for 35-40 minutes, until the crust is golden and the apples are tender.
9While the galette is baking, combine honey, dried lavender, and water in a small saucepan. Heat gently until just warm and fragrant, then strain to remove lavender.
10Remove the galette from the oven and let it cool for 10 minutes. Drizzle with the honey-lavender mixture before serving.
