Ingredients

Chicken

  • 4 pieces chicken thighs bone-in and skin-on
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground

Mole Sauce

  • 2 tablespoons vegetable oil
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin ground
  • 1 teaspoon cinnamon ground
  • 1/2 teaspoon cloves ground
  • 2 cups chicken broth
  • 1/2 cup peanut butter smooth
  • 1/4 cup dark chocolate chopped
  • 1 tablespoon sugar
  • 1/4 cup raisins
  • 1/4 cup sesame seeds toasted

Instructions

  1. 1 Season the chicken thighs with salt and freshly ground black pepper.
  2. 2 In a large skillet, heat the olive oil over medium-high heat. Sear the chicken thighs until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
  3. 3 In the same skillet, add vegetable oil and sauté the chopped onion and minced garlic until the onion is translucent, about 5 minutes.
  4. 4 Stir in the chili powder, ground cumin, cinnamon, and cloves, cooking for another minute until the spices are fragrant.
