Ingredients

Main Ingredients

  • 4 pieces chicken breasts boneless, skinless
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 teaspoon smoked paprika

Chipotle Sauce

  • 1 cup chipotle peppers in adobo sauce chopped
  • 1 cup chicken broth
  • 2 cloves garlic minced
  • 1 small onion finely chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon cumin ground

Instructions

  1. 1 Season the chicken breasts with salt, black pepper, and smoked paprika on both sides.
  2. 2 Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. 3 In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.
  4. 4 Add the chopped chipotle peppers and cumin to the skillet, stirring to combine with the onions and garlic.
  5. 5 Pour in the chicken broth and lime juice, stirring to combine. Bring the mixture to a simmer.
  6. 6 Return the seared chicken breasts to the skillet. Reduce the heat to low, cover, and let simmer for 15-20 minutes until the chicken is cooked through and tender.
  7. 7 Taste and adjust seasoning if necessary. If desired, shred the chicken with two forks for a different texture.
  8. 8 Serve the chipotle chicken hot, garnished with fresh cilantro or additional lime wedges, if desired.
