Ingredients

Main Ingredients

  • 1 pound flank steak trimmed of excess fat
  • 8 pieces corn tortillas warmed
  • 1/2 cup chopped cilantro
  • 1 medium white onion chopped
  • 2 tablespoons lime juice freshly squeezed

Marinade

  • 1/4 cup olive oil
  • 3 tablespoons lime juice freshly squeezed
  • 4 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground

Guacamole

  • 2 large avocados peeled and pitted
  • 1 small tomato diced
  • 1 tablespoon lime juice freshly squeezed
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon salt

Instructions

  1. 1 In a bowl, mix together olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper to create the marinade.
  2. 2 Place the flank steak in a resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes, preferably 2 hours.
  3. 3 While the steak marinates, prepare the guacamole by mashing the avocados in a bowl. Stir in diced tomato, lime juice, chopped cilantro, and salt. Adjust seasoning to taste.
  4. 4 Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and grill for 5-7 minutes per side, or until desired doneness is reached.
  5. 5 Transfer the steak to a cutting board and let it rest for 5 minutes. Slice it thinly across the grain.
  6. 6 Warm the corn tortillas on the grill for about 30 seconds on each side or until pliable.
  7. 7 Assemble the tacos by placing slices of steak on each tortilla. Top with chopped onion, cilantro, and a dollop of guacamole. Drizzle with lime juice if desired.
  8. 8 Serve immediately with extra lime wedges on the side.
