Ingredients

Main Ingredients

  • 1 cup kimchi chopped
  • 4 large eggs beaten
  • 1 cup shredded cheese
  • 4 large flour tortillas
  • 1 tablespoon sesame oil
  • 1/2 cup cooked bacon crumbled
  • 1 tablespoon gochujang
  • 2 tablespoons green onions sliced

Garnishes

  • 1 tablespoon sesame seeds toasted
  • 1/4 cup fresh cilantro chopped

Instructions

  1. 1 Heat the sesame oil in a large skillet over medium heat.
  2. 2 Add the chopped kimchi and cook for 3-4 minutes until slightly caramelized.
  3. 3 Push the kimchi to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs gently until they are just set.
  4. 4 Mix the cooked eggs with the kimchi, add the gochujang, and stir well to combine.
  5. 5 Warm the flour tortillas in a separate pan or in the microwave for about 30 seconds to make them pliable.
  6. 6 Assemble the burritos by placing a portion of the kimchi-egg mixture onto each tortilla, then add crumbled bacon, shredded cheese, and sliced green onions.
  7. 7 Fold in the sides of the tortilla and roll it tightly into a burrito.
  8. 8 Serve the burritos warm, garnished with toasted sesame seeds and chopped cilantro.
