Instructions
1Heat the sesame oil in a large skillet over medium heat.
2Add the chopped kimchi and cook for 3-4 minutes until slightly caramelized.
3Push the kimchi to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs gently until they are just set.
4Mix the cooked eggs with the kimchi, add the gochujang, and stir well to combine.
5Warm the flour tortillas in a separate pan or in the microwave for about 30 seconds to make them pliable.
6Assemble the burritos by placing a portion of the kimchi-egg mixture onto each tortilla, then add crumbled bacon, shredded cheese, and sliced green onions.
7Fold in the sides of the tortilla and roll it tightly into a burrito.
