Ingredients

  • 1 pound spicy Italian sausage casings removed
  • 1 tablespoon olive oil

  • 2 cloves garlic minced
  • 4 cups kale chopped

Instructions

  1. 1 Heat the olive oil in a large skillet over medium heat.
  2. 2 Add the Italian sausage to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  3. 3 Add the diced onion to the skillet and sauté until translucent, about 3 minutes.

  5. 5 Add the chopped kale to the skillet, and cook until wilted, about 3-4 minutes.
  6. 6 Sprinkle the red pepper flakes, salt, and black pepper over the mixture and stir to combine.
  7. 7 Make four wells in the sausage and kale mixture, and crack an egg into each well.
  8. 8 Cover the skillet and cook until the eggs are set to your liking, about 5 minutes for slightly runny yolks.
  9. 9 Remove from heat and let rest for a minute. Serve the skillet hot, garnished with additional red pepper flakes if desired.
