Instructions
1Preheat your oven to 375°F (190°C).
2In a medium skillet over medium heat, add olive oil and cook the chorizo, breaking it apart with a spatula, until browned and fully cooked, about 5-7 minutes.
3Add the chopped onion to the chorizo and cook for another 3-4 minutes until the onion is soft and translucent.
4In a large oven-safe dish, evenly spread the cooked chorizo and onion mixture.
5Top the chorizo mixture with the shredded Oaxaca and Monterey Jack cheeses.
6Place the dish in the preheated oven and bake for about 10 minutes, or until the cheese is fully melted and bubbly.
7Remove from the oven and sprinkle with chopped cilantro and drizzle with lime juice.
8Season with a pinch of salt to taste.
9Serve hot with warm corn tortillas and salsa on the side for dipping.
