Ingredients

2 tablespoons honey

Instructions
1Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
2In a large bowl, whisk together the sifted flour, baking soda, baking powder, and salt.
3Add the chilled, cubed butter into the dry ingredients and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
4Make a well in the center of the mixture and pour in the cold buttermilk. Stir until just combined. Do not overmix.
5Turn the dough out onto a floured surface and gently pat it into a rectangle about 1 inch thick. Fold it over and gently pat again to 1-inch thickness.
6Use a round cutter to cut the biscuits and place them on the prepared baking sheet. Press together scraps to cut additional biscuits.
7Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown on top.
8While the biscuits are baking, prepare the honey butter by mixing the softened butter, honey, and optional salt in a small bowl until smooth.
9Remove the biscuits from the oven and let them cool slightly. Serve warm with honey butter.
