Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour sifted
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs lightly beaten

Instructions

  1. 1 Preheat your oven to 400°F (200°C). Grease or line a 12-cup muffin tin with paper liners.
  2. 2 In a large bowl, combine the sifted flour, cornmeal, sugar, baking powder, and salt. Mix well.
  3. 3 In a separate bowl, whisk together the milk, vegetable oil, and lightly beaten eggs until well combined.
  4. 4 Pour the wet ingredients into the dry ingredients. Stir until just combined, being careful not to overmix.
  5. 5 Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. 6 Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. 7 Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
