Ingredients

  • 4 ears corn on the cob husks removed
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup cotija cheese crumbled
  • 1 teaspoon chili powder
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon lime juice freshly squeezed
  • 1/2 teaspoon salt

Instructions

  1. 1 Preheat your grill to medium-high heat.
  2. 2 Brush each ear of corn lightly with olive oil and sprinkle with salt.
  3. 3 Place the corn on the grill and cook for 10-15 minutes, turning occasionally, until slightly charred on all sides.
  4. 4 While the corn is grilling, mix the mayonnaise, sour cream, lime juice, and half of the cotija cheese in a bowl.
  5. 5 Once the corn is cooked, remove it from the grill and let it cool slightly.
  6. 6 Using a brush or spoon, slather each ear of corn with the mayonnaise mixture until fully coated.
  7. 7 Sprinkle the remaining cotija cheese, chili powder, and cilantro evenly over the coated corn.
  8. 8 Serve immediately with extra lime wedges on the side for additional flavor.
