Ingredients

Pastry Ingredients

  • 2 cups all-purpose flour sifted
  • 1/2 cup unsalted butter cold and cubed
  • 1 teaspoon salt
  • 6-8 tablespoons ice water

Filling Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion finely chopped
  • 2 cloves garlic minced
  • 4 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1 teaspoon black pepper freshly ground

Instructions

  1. 1 Preheat the oven to 375°F (190°C).
  2. 2 In a large bowl, combine sifted flour and salt. Add cold butter cubes and mix until the mixture resembles coarse crumbs.
  3. 3 Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  4. 4 In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and cook for another minute.
  5. 5 Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
  6. 6 In a bowl, combine the spinach mixture with crumbled feta cheese and black pepper. Mix until well combined.
  7. 7 Roll out the pastry dough on a floured surface to about 1/8 inch thick. Cut into 4-inch squares.
  8. 8 Place a tablespoon of filling in the center of each square. Fold the squares into triangles and press the edges to seal.
  9. 9 Place pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.
  10. 10 Remove from oven and let cool slightly before serving.
