Pastry Ingredients
2 cups all-purpose floursifted
1/2 cup unsalted buttercold and cubed
1 teaspoon salt
6-8 tablespoons ice water
Filling Ingredients
1 tablespoon olive oil
1 cup onionfinely chopped
2 cloves garlicminced
4 cups fresh spinachchopped
1 cup feta cheesecrumbled
1 teaspoon black pepperfreshly ground
Instructions
1Preheat the oven to 375°F (190°C).
2In a large bowl, combine sifted flour and salt. Add cold butter cubes and mix until the mixture resembles coarse crumbs.
3Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
4In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and cook for another minute.
5Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
6In a bowl, combine the spinach mixture with crumbled feta cheese and black pepper. Mix until well combined.
7Roll out the pastry dough on a floured surface to about 1/8 inch thick. Cut into 4-inch squares.
8Place a tablespoon of filling in the center of each square. Fold the squares into triangles and press the edges to seal.
9Place pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.
10Remove from oven and let cool slightly before serving.
