Ingredients

Zucchini Fritters

  • 3 cups zucchini grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh mint chopped
  • 2 tablespoons olive oil
  • 2 large eggs beaten
  • 1 teaspoon black pepper ground

Tzatziki Dip

  • 1 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/2 cucumber cucumber grated and drained
  • 2 tablespoons fresh dill chopped
  • 1 teaspoon salt

Instructions

  1. 1 Grate the zucchini and place it in a colander. Sprinkle with salt and let it sit for 10 minutes to draw out excess moisture.
  2. 2 After 10 minutes, squeeze the zucchini to remove as much liquid as possible. Transfer to a mixing bowl.
  3. 3 In the mixing bowl, combine the zucchini with flour, baking powder, crumbled feta, chopped dill, mint, beaten eggs, and ground black pepper. Mix well to form a batter.
  4. 4 Heat olive oil in a large skillet over medium heat.
  5. 5 Spoon the batter into the skillet to form fritters. Cook for 3-4 minutes on each side until golden brown and crispy.
  6. 6 Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  7. 7 For the tzatziki dip, mix Greek yogurt, olive oil, lemon juice, minced garlic, grated and drained cucumber, chopped dill, and salt in a bowl until well combined.
