Ingredients

  • 2 cups flour sifted
  • 1 cup water
  • 1 cup kimchi chopped
  • 1 bunch scallions sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil

Instructions

  1. 1 In a large mixing bowl, combine the sifted flour, water, soy sauce, sugar, and salt. Mix until a smooth batter forms.
  2. 2 Add the chopped kimchi and sliced scallions to the batter. Stir well to evenly distribute the ingredients.
  3. 3 Heat a large non-stick pan over medium heat and add 1 tablespoon of vegetable oil.
  4. 4 Pour half of the batter into the pan, spreading it out evenly to form a pancake about 1/4 inch thick.
  5. 5 Cook for 4-5 minutes until the bottom is crispy and golden brown. Carefully flip the pancake and cook the other side for another 4-5 minutes.
  6. 6 Remove the pancake from the pan and drain on paper towels. Repeat with the remaining batter.
  7. 7 Slice the pancakes into wedges and serve hot with a dipping sauce of your choice.
