Ingredients

  • 4 pork chops bone-in
  • 1/2 cup all-purpose flour sifted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 2 tablespoons vegetable oil

Sweet and Sour Sauce

  • 1 cup pineapple chunks canned with juice
  • 1/3 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar packed
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. 1 In a shallow dish, combine flour, salt, and pepper. Dredge each pork chop in the flour mixture, shaking off excess.
  2. 2 Heat vegetable oil in a large skillet over medium heat. Add pork chops and cook for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
  3. 3 In the same skillet, add pineapple chunks with juice, ketchup, rice vinegar, brown sugar, and soy sauce. Stir well to combine.
  4. 4 Bring the sauce to a simmer, stirring occasionally. Add the cornstarch mixture and stir until sauce thickens.
  5. 5 Return the pork chops to the skillet, spooning the sauce over the top. Cover and simmer for an additional 10 minutes until pork is cooked through.
  6. 6 Serve the pork chops hot, garnished with additional pineapple chunks if desired.
