Sweet and Sour Sauce
1 cup pineapple chunkscanned with juice
1/3 cup ketchup
1/4 cup rice vinegar
1/4 cup brown sugarpacked
2 tablespoons soy saucelow sodium
1 tablespoon cornstarchmixed with 2 tablespoons water
Instructions
1In a shallow dish, combine flour, salt, and pepper. Dredge each pork chop in the flour mixture, shaking off excess.
2Heat vegetable oil in a large skillet over medium heat. Add pork chops and cook for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
3In the same skillet, add pineapple chunks with juice, ketchup, rice vinegar, brown sugar, and soy sauce. Stir well to combine.
4Bring the sauce to a simmer, stirring occasionally. Add the cornstarch mixture and stir until sauce thickens.
5Return the pork chops to the skillet, spooning the sauce over the top. Cover and simmer for an additional 10 minutes until pork is cooked through.
