Instructions
1Heat olive oil in a large skillet over medium-high heat.
2Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.
3Add the sliced bell peppers and onion to the skillet with the chicken, and sauté for an additional 5 minutes until vegetables are tender.
4Sprinkle the fajita seasoning and red pepper flakes over the chicken and vegetables, stirring well to combine.
5Remove the skillet from the heat and set aside.
6Place a tortilla in a clean, dry skillet over medium heat. Sprinkle 1/4 cup of the Mexican cheese blend evenly over the tortilla.
7Add a portion of the chicken and vegetable mixture on top of the cheese, then top with another 1/4 cup of cheese and a second tortilla.
8Cook until the bottom tortilla is golden brown and the cheese begins to melt, about 2-3 minutes. Carefully flip the quesadilla and cook the other side until golden brown.
9Remove the quesadilla from the skillet and repeat with the remaining ingredients.
10Slice each quesadilla into wedges and serve hot with sour cream, guacamole, and chopped cilantro.
