Ingredients

  • 4 large russet potatoes scrubbed
  • 1 cup cheddar cheese shredded
  • 6 slices bacon cooked and crumbled
  • 1/4 cup chives chopped
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream

Instructions

  1. 1 Preheat your oven to 400°F (200°C).
  2. 2 Pierce each potato several times with a fork, then bake directly on the oven rack for 45-50 minutes until tender.
  3. 3 Allow the potatoes to cool slightly, then cut them in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch of potato on the skin.
  4. 4 Brush the insides of the potato skins with olive oil, then sprinkle with salt and pepper.
  5. 5 Place the potato skins on a baking sheet and return to the oven for 10 minutes to crisp up.
  6. 6 Remove the skins from the oven and fill each with cheddar cheese and bacon.
  7. 7 Return the filled skins to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly.
  8. 8 Remove from the oven and sprinkle with chopped chives.
  9. 9 Serve with a dollop of sour cream on the side or on top of each potato skin.
