Ingredients

  • 1 pound beef chuck cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 cup coconut milk full-fat
  • 1/2 cup Massaman curry paste
  • 2 cups beef broth
  • 3 medium potatoes peeled and cut into chunks
  • 1 large onion sliced
  • 3 tablespoons peanut butter
  • 2 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 1 tablespoon brown sugar
  • 1/2 cup roasted peanuts crushed
  • 1 stick cinnamon
  • 3 pieces cardamom pods cracked

Instructions

  1. 1 Heat vegetable oil in a large pot over medium-high heat. Add beef cubes and sear until browned on all sides. Remove and set aside.
  2. 2 In the same pot, add sliced onion and sauté until softened.
  3. 3 Stir in the Massaman curry paste and cook for 2 minutes until fragrant.
  4. 4 Return the beef to the pot and pour in coconut milk and beef broth. Bring to a simmer.
  5. 5 Add potatoes, peanut butter, fish sauce, tamarind paste, brown sugar, cinnamon stick, and cardamom pods. Stir well to combine.
  6. 6 Cover the pot and simmer on low heat for 1.5 to 2 hours, or until the beef is tender and the potatoes are cooked through.
  7. 7 Once cooked, remove the cinnamon stick and cardamom pods. Stir in crushed peanuts.
  8. 8 Taste and adjust seasoning with additional fish sauce or sugar as needed.
  9. 9 Serve hot with steamed rice and garnish with additional crushed peanuts if desired.
