Ingredients

  • 1 whole chicken 3-4 lbs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 bunch fresh thyme divided
  • 2 pieces lemons halved
  • 4 cloves garlic minced
  • 1 cup chicken broth

Instructions

  1. 1 Preheat your oven to 425°F (220°C).
  2. 2 Rinse the chicken inside and out under cold running water, then pat dry with paper towels.
  3. 3 In a small bowl, mix olive oil, salt, pepper, and minced garlic.
  4. 4 Rub the entire chicken with the olive oil mixture, making sure to get under the skin as well.
  5. 5 Stuff the cavity of the chicken with half of the thyme and two lemon halves.
  6. 6 Place the chicken in a roasting pan and scatter the remaining lemon halves and thyme around it.
  7. 7 Pour the chicken broth into the bottom of the roasting pan.
  8. 8 Roast the chicken in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  9. 9 Let the chicken rest for 10-15 minutes before carving. Serve with the roasted lemon halves and juices from the pan.
