4 pounds beef short ribs
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepperfreshly ground
Bourbon BBQ Sauce
1 cup ketchup
1/2 cup bourbon
1/4 cup apple cider vinegar
1/4 cup brown sugarpacked
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
Instructions
1Preheat your oven to 325°F (165°C).
2Season the beef short ribs with salt and freshly ground black pepper.
3In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Add the short ribs and sear them on all sides until browned, about 8-10 minutes.
4Remove the short ribs from the pot and set aside.
5In the same pot, add all the ingredients for the bourbon BBQ sauce. Stir to combine and bring to a simmer.
6Return the short ribs to the pot, ensuring they're well-coated with the sauce.
7Cover the pot with a lid or aluminum foil and place it in the preheated oven. Cook for 2.5 to 3 hours, or until the ribs are tender and the meat is falling off the bone.
8Remove the pot from the oven and let the ribs rest for 10 minutes before serving.
9Serve the ribs hot, drizzled with additional bourbon BBQ sauce from the pot.
