Ingredients

  • 2 tablespoons olive oil
  • 1 pound andouille sausage sliced
  • 1 pound shrimp peeled and deveined
  • 1 cup onion chopped
  • 1 cup green bell pepper chopped
  • 1 cup celery chopped
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 can diced tomatoes with juice
  • 1 1/2 cups long grain rice uncooked
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons parsley chopped
  • 1 bunch green onions sliced

Instructions

  1. 1 Heat olive oil in a large pot over medium-high heat. Add sliced sausage and brown for about 5 minutes, stirring occasionally.
  2. 2 Remove sausage from the pot and set aside. In the same pot, add chopped onion, bell pepper, and celery. Sauté until vegetables are tender, about 5 minutes.
  3. 3 Add minced garlic and sauté for another minute until fragrant.
  4. 4 Return the sausage to the pot, then add chicken broth, diced tomatoes with juice, rice, Cajun seasoning, thyme, and cayenne pepper. Stir well to combine.
  5. 5 Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is cooked and liquid is absorbed.
  6. 6 Add the shrimp to the pot, stir, and cook for another 5-7 minutes until the shrimp are pink and cooked through.
  7. 7 Remove the pot from heat. Stir in chopped parsley and sliced green onions. Adjust seasoning with salt and pepper if necessary.
  8. 8 Let the jambalaya sit for a few minutes before serving to allow the flavors to meld.
