Ingredients

Instructions
1Heat olive oil in a large pot over medium-high heat. Add sliced sausage and brown for about 5 minutes, stirring occasionally.
2Remove sausage from the pot and set aside. In the same pot, add chopped onion, bell pepper, and celery. Sauté until vegetables are tender, about 5 minutes.
3Add minced garlic and sauté for another minute until fragrant.
4Return the sausage to the pot, then add chicken broth, diced tomatoes with juice, rice, Cajun seasoning, thyme, and cayenne pepper. Stir well to combine.
5Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is cooked and liquid is absorbed.
6Add the shrimp to the pot, stir, and cook for another 5-7 minutes until the shrimp are pink and cooked through.
7Remove the pot from heat. Stir in chopped parsley and sliced green onions. Adjust seasoning with salt and pepper if necessary.
8Let the jambalaya sit for a few minutes before serving to allow the flavors to meld.
