Ingredients

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1 teaspoon Kashmiri chili powder
  • 2 cups water
  • 1 teaspoon salt or to taste

Garnish

  • 2 tablespoons fresh cilantro chopped

Instructions

  1. 1 Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and sauté until golden brown.
  2. 2 Add the minced garlic and grated ginger to the pot and sauté for another 2 minutes until fragrant.
  3. 3 Mix in the ground cumin, coriander, turmeric, cinnamon, cardamom, and Kashmiri chili powder. Stir for about 1 minute to release the spices' aromas.
  4. 4 Add the lamb cubes to the pot and brown them on all sides, about 5-7 minutes.
  5. 5 Stir in the tomato paste, whisked yogurt, and salt. Mix well to coat the lamb in the sauce.
  6. 6 Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for 60-75 minutes, or until the lamb is tender.
  7. 7 Check for seasoning and adjust salt if necessary. Continue to simmer uncovered for an additional 10 minutes to thicken the sauce.
  8. 8 Garnish with freshly chopped cilantro before serving.
