Ingredients

  • 1 1/2 lbs chicken thighs boneless, skinless, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tbsp ghee
  • 1 large onion finely sliced
  • 3 cloves garlic minced
  • 1 tbsp ginger minced
  • 1/2 cup heavy cream
  • 1/4 cup cashew nuts ground into a paste
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1/2 cup water
  • to taste salt
  • to garnish fresh cilantro chopped

Instructions

  1. 1 In a large bowl, mix the chicken pieces with yogurt, turmeric, and salt. Marinate for at least 30 minutes.
  2. 2 Heat ghee in a large pan over medium heat. Add the sliced onions and sauté until golden brown.
  3. 3 Add the minced garlic and ginger to the pan. Cook for another 2 minutes until fragrant.
  4. 4 Stir in the coriander powder, garam masala, and chili powder. Cook for 1 minute to release their aroma.
  5. 5 Add the marinated chicken to the pan. Cook until the chicken is browned on all sides.
  6. 6 Mix in the cashew nut paste and water. Cover and simmer for about 15 minutes until the chicken is tender.
  7. 7 Pour in the heavy cream, stirring well to combine. Simmer for another 5 minutes until the sauce thickens.
  8. 8 Adjust seasoning with salt to taste. Remove from heat.
  9. 9 Garnish with chopped cilantro before serving.
