Instructions

  2. 2 Slice the eggplants into 1/4 inch rounds and sprinkle with salt. Let them sit for 15 minutes to draw out moisture.

  4. 4 Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with half of the grated Parmesan cheese.
