Ingredients

  • 4 whole artichokes trimmed
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese grated
  • 1/4 cup parsley chopped
  • 2 cloves garlic minced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 whole lemon cut into wedges

Instructions

  1. 1 Preheat your oven to 375°F (190°C).
  2. 2 Trim the artichokes by cutting off the top quarter and snipping the tips of the leaves. Remove the stem to create a flat base.
  3. 3 Bring a large pot of salted water to a boil. Add the artichokes and boil for 10 minutes to soften.
  4. 4 In a bowl, combine breadcrumbs, Parmesan cheese, parsley, and minced garlic. Add salt and pepper to taste.
  5. 5 Remove artichokes from boiling water and let them cool slightly. Gently separate the leaves and remove the choke using a spoon.
  6. 6 Stuff the breadcrumb mixture into the space between the leaves of each artichoke.
  7. 7 Place the stuffed artichokes in a baking dish. Drizzle each with olive oil.
  8. 8 Cover the dish with aluminum foil and bake for 30-35 minutes until the artichokes are tender.
  9. 9 Remove the foil and bake for an additional 10 minutes to brown the top.
