  • 1 1/2 pounds pork shoulder cut into 1-inch cubes

Spice Mix

  • 1 teaspoon cumin seeds ground

  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 stick cinnamon
  • 4 whole cloves

Instructions

  1. 1 In a large bowl, combine the pork with the cider vinegar and half of the spice mix. Marinate for at least 30 minutes or overnight for best results.
  2. 2 Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.
  3. 3 Add the minced garlic and grated ginger to the onions and cook for 2 minutes until fragrant.
  4. 4 Stir in the remaining spice mix and cook for another minute to release the flavors.
  5. 5 Add the marinated pork to the pot and sear until browned on all sides.
  6. 6 Pour in the tomato puree and stir well to coat the pork.
  7. 7 Add the water, bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes or until the pork is tender.
  8. 8 Adjust salt to taste and check the sauce consistency. Simmer uncovered for a few more minutes if needed to thicken the sauce.
