1 1/4 cups all-purpose flour
1/4 cup almond flour
1/2 cup unsalted buttercold, cubed
3 tablespoons granulated sugar
1/4 teaspoon salt

Honey-Lavender Glaze
2 tablespoons honey
1 teaspoon dried lavendercrushed
1 tablespoon water
Instructions
1In a large bowl, combine the all-purpose flour, almond flour, sugar, and salt. Mix well.
2Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.
3Add the ice water, one tablespoon at a time, mixing with a fork until the dough just comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
4Preheat the oven to 400°F (200°C). On a floured surface, roll out the dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
5Arrange the pear slices in the center of the dough, leaving a 2-inch border. Sprinkle the toasted almonds over the pears.
6Fold the edges of the dough over the pears to create a rustic edge. Brush the pears and crust with melted butter and sprinkle with a tablespoon of sugar.
7Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the pears are tender.
8While the galette is baking, prepare the honey-lavender glaze. In a small saucepan, combine honey, crushed lavender, and water. Heat gently until the honey is thinned and infused with lavender.
9Remove the galette from the oven and let it cool slightly. Drizzle the honey-lavender glaze over the top before serving.
