Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cans crushed tomatoes
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup fresh basil chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper freshly ground

Instructions

  1. 1 Heat olive oil in a large pot over medium heat.
  2. 2 Add chopped onion and minced garlic, sauté until onion is translucent, about 5 minutes.
  3. 3 Stir in crushed tomatoes and vegetable broth, and bring to a simmer.
  4. 4 Reduce heat to low and let it cook for 15 minutes to blend flavors.
  5. 5 Remove from heat, then use an immersion blender to puree until smooth.
  6. 6 Return pot to low heat, stir in heavy cream, and add chopped basil.
  7. 7 Season with salt and freshly ground black pepper to taste.
  8. 8 Cook for an additional 5 minutes until heated through.
  9. 9 Serve hot, garnished with additional basil if desired.
