Ingredients

  • 4 links Italian sausage
  • 2 tablespoons olive oil
  • 1 large red bell pepper sliced
  • 1 large green bell pepper sliced
  • 1 large yellow onion sliced
  • 2 cloves garlic minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 4 slices provolone cheese
  • 4 rolls Italian sandwich rolls halved

Instructions

  1. 1 Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausage links and cook until browned on all sides, about 8-10 minutes.
  2. 2 Remove the sausages from the skillet and set aside. In the same skillet, add the remaining tablespoon of olive oil.
  3. 3 Add the sliced red bell pepper, green bell pepper, and yellow onion to the skillet. Cook until the vegetables are tender, about 5-7 minutes.
  4. 4 Stir in the minced garlic, dried oregano, dried basil, and red pepper flakes. Cook for an additional 1-2 minutes until the garlic is fragrant.
  5. 5 Return the sausages to the skillet, nestling them among the peppers and onions. Cover and let simmer for 10 minutes to meld the flavors.
  6. 6 Preheat your oven's broiler. Place the halved sandwich rolls on a baking sheet, cut side up.
  7. 7 Place a slice of provolone cheese on each half of the rolls. Broil for 1-2 minutes until the cheese is melted and bubbly.
  8. 8 Assemble the sandwiches by placing a sausage link on each roll, topping with the pepper and onion mixture.
  9. 9 Serve the sandwiches hot, optionally garnished with fresh basil or parsley.
