Ingredients

  • 12 ounces spaghetti
  • 2 tablespoons extra-virgin olive oil
  • 2-3 cups heirloom tomatoes chopped
  • 2 cloves garlic minced
  • 1 cup fresh basil leaves torn
  • 8 ounces burrata cheese
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper freshly ground

Instructions

  1. 1 Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.
  2. 2 While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. 3 Add the chopped heirloom tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften and release their juices.
  4. 4 Drain the cooked pasta, reserving 1/2 cup of the pasta water. Add the pasta to the skillet with the tomatoes and toss to combine.
  5. 5 If the pasta seems dry, add a little of the reserved pasta water to loosen it. Season with sea salt and freshly ground black pepper.
  6. 6 Remove the skillet from the heat and gently fold in the torn basil leaves.
  7. 7 Transfer the pasta to serving plates. Tear the burrata cheese into pieces and place on top of the pasta.
  8. 8 Drizzle a little extra olive oil over the burrata and serve immediately.
