Ingredients

Main Ingredients

  • 2 cans black beans drained and rinsed
  • 1 cup breadcrumbs
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped cilantro
  • 1 egg beaten
  • 2 tablespoons olive oil

Toppings

  • 4 slices pepper jack cheese
  • 1 avocado sliced
  • 1/2 cup salsa
  • 4 whole grain burger buns toasted

Instructions

  1. 1 In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
  2. 2 Add the breadcrumbs, cumin, chili powder, garlic powder, salt, pepper, cilantro, and beaten egg to the mashed beans. Mix until well combined.
  3. 3 Divide the mixture into 4 equal portions and shape each into a patty.
  4. 4 Heat the olive oil in a large skillet over medium heat.
  5. 5 Cook the patties in the skillet for about 4-5 minutes on each side, or until they are heated through and slightly crispy on the outside.
  6. 6 In the last minute of cooking, place a slice of pepper jack cheese on each patty and cover the skillet to allow the cheese to melt.
  7. 7 Assemble the burgers by placing each patty on a toasted bun. Top with sliced avocado and salsa.
