Ingredients

Dressing

Instructions

  1. 1 Add the rinsed quinoa and water to a medium saucepan. Bring to a boil over medium-high heat.
  2. 2 Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and the quinoa is tender.
  3. 3 Remove the saucepan from heat and let the quinoa rest, covered, for 5 minutes. Then fluff with a fork and let it cool.
  4. 4 In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, kalamata olives, feta cheese, and parsley.
  5. 5 In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper to make the dressing.
  6. 6 Pour the dressing over the quinoa mixture and toss gently to combine all ingredients evenly.
  7. 7 Adjust seasoning with additional salt and pepper if needed. Serve immediately or refrigerate for up to 2 days.
