Ingredients

Prawn Masala

  • 1 lb prawns shelled and deveined
  • 2 tbsp vegetable oil
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 2 medium tomatoes pureed
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 1/4 cup fresh cilantro chopped

Turmeric Rice

  • 1 cup Basmati rice rinsed
  • 2 cups water
  • 1/2 tsp turmeric powder
  • 1/2 tsp salt
  • 1 tbsp butter

Instructions

  1. 1 Heat the vegetable oil in a large pan over medium heat.
  2. 2 Add the chopped onions and sauté until golden brown.
  3. 3 Stir in the minced garlic and grated ginger, and cook for another minute.
  4. 4 Add the tomato puree followed by coriander, cumin, red chili, and turmeric powders. Cook until the oil separates from the masala.
  5. 5 Add the prawns to the pan and stir well to coat them in the masala. Cook until the prawns are done, about 5-7 minutes.
  6. 6 Sprinkle the garam masala and salt over the prawns and mix well. Garnish with chopped cilantro.
  7. 7 For the turmeric rice, bring water to a boil in a saucepan. Add the rinsed rice, turmeric powder, salt, and butter.
  8. 8 Reduce the heat to low, cover, and simmer until the rice is cooked and all the water is absorbed, about 15 minutes.
  9. 9 Fluff the rice with a fork and serve alongside the prawn masala.
