Ingredients

  • 1 cup glutinous rice soaked for 1 hour
  • 1 1/2 cups coconut milk divided

Instructions

  5. 5 Fill a shallow dish with warm water. Dip each rice paper wrapper in the water to soften.
  6. 6 Place a portion of sticky rice and a few mango slices in the center of the softened rice paper. Roll tightly into a spring roll.
  7. 7 Repeat with remaining ingredients.
  8. 8 Serve the spring rolls with a drizzle of the remaining coconut milk and optional toppings such as toasted sesame seeds and crushed peanuts.
