Ingredients

Main Ingredients

  • 1 cup glutinous rice rinsed and soaked for 4 hours or overnight
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 2 whole ripe mangoes peeled and sliced

Garnish

  • 1 tablespoon sesame seeds toasted
  • 1/4 cup coconut cream
  • 1 tablespoon mint leaves chopped

Instructions

  1. 1 Rinse and soak the glutinous rice for 4 hours or overnight.
  2. 2 Drain the soaked rice and steam it in a steamer lined with cheesecloth for about 30-40 minutes until cooked through.
  3. 3 While the rice is steaming, in a saucepan, combine coconut milk, sugar, and salt. Cook over low heat, stirring until the sugar dissolves. Do not let it boil.
  4. 4 Once the rice is cooked, transfer it to a large bowl. Pour half of the coconut milk mixture over the hot rice and mix well. Let it sit for about 20 minutes to absorb the flavors.
  5. 5 Meanwhile, peel and slice the mangoes. Set aside.
  6. 6 For serving, mold the sticky rice onto plates or a platter. Arrange mango slices around the rice.
  7. 7 Drizzle the remaining coconut milk mixture over the rice and mango.
  8. 8 Garnish with toasted sesame seeds, a dollop of coconut cream, and sprinkle chopped mint leaves on top.
