Charred Broccoli with Almonds
1 pound broccolicut into florets
2 tablespoons olive oil
1/4 cup almondssliced
1 teaspoon salt
1/2 teaspoon red pepper flakes
Instructions
1Preheat your oven to 425°F (220°C).
2In a small bowl, combine olive oil, minced garlic, lemon zest, orange juice, rosemary, thyme, salt, and black pepper.
3Rub the mixture all over the chicken, ensuring it is evenly coated, including under the skin for maximum flavor.
4Place the chicken in a roasting pan and roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
5While the chicken is roasting, prepare the broccoli by tossing it with olive oil, salt, and red pepper flakes.
6Heat a large skillet over medium-high heat and add the broccoli. Cook for 5-7 minutes until charred and tender.
7Add the sliced almonds to the skillet with the broccoli and sauté for an additional 2 minutes.
8Remove the chicken from the oven and let it rest for 10 minutes before carving.
9Serve the chicken with charred broccoli and almonds on the side. Garnish with additional lemon zest if desired.
