Ingredients
Chicken Satay
1 pound chicken breastcut into 1-inch cubes
1/2 cup coconut milk
2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons brown sugar
1 tablespoon curry powder
2 cloves garlicminced
1 teaspoon ground coriander
1 teaspoon ground cumin
Peanut Sauce
1/2 cup peanut buttersmooth
1/2 cup coconut milk
2 tablespoons soy sauce
1 tablespoon lime juicefreshly squeezed
1 tablespoon brown sugar
1 teaspoon sriracha
Instructions
1In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, curry powder, minced garlic, ground coriander, and ground cumin. Mix well to create the marinade.
2Add chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to develop.
3While the chicken is marinating, prepare the peanut sauce by combining peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and sriracha in a saucepan over low heat. Stir until smooth and heated through. Remove from heat and set aside.
