Ingredients

Chicken Satay

  • 1 pound chicken breast cut into 1-inch cubes
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon curry powder
  • 2 cloves garlic minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin

Peanut Sauce

  • 1/2 cup peanut butter smooth
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon brown sugar
  • 1 teaspoon sriracha

Instructions

  1. 1 In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, curry powder, minced garlic, ground coriander, and ground cumin. Mix well to create the marinade.
  2. 2 Add chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes to allow flavors to develop.
