Ingredients
Chicken Satay
1 1/2 pounds chicken breastcut into strips
1/2 cup coconut milk
2 tablespoons soy sauce
1 tablespoon fish sauce
2 tablespoons brown sugar
1 teaspoon ground coriander
1 teaspoon cumin
1 tablespoon minced garlic
1 tablespoon minced ginger
Peanut Sauce
1/2 cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon lime juicefreshly squeezed
1 teaspoon sriracha
1/2 cup coconut milk
1 tablespoon minced garlic
Instructions
1In a bowl, combine coconut milk, soy sauce, fish sauce, brown sugar, coriander, cumin, garlic, and ginger for the chicken marinade.
2Add the chicken strips to the marinade, cover, and refrigerate for at least 30 minutes, or overnight for more flavor.
3Soak wooden skewers in water for at least 30 minutes to prevent burning during grilling.
4Thread the marinated chicken strips onto the soaked skewers.
5Preheat a grill or grill pan over medium-high heat. Grill the skewers for 5-7 minutes on each side, or until the chicken is cooked through and slightly charred.
6For the peanut sauce, combine peanut butter, soy sauce, brown sugar, lime juice, sriracha, coconut milk, and garlic in a small saucepan over low heat.
