Method
- 01In a large bowl, combine the chicken pieces with the red wine. Cover and marinate in the refrigerator for at least 1 hour.
- 02Remove the chicken from the marinade and pat dry with paper towels. Reserve the marinade.
- 03In a heavy-bottomed pot, heat the olive oil over medium-high heat. Add the butter and allow it to melt and foam.
- 04Season the chicken with salt and pepper. Brown the chicken pieces in batches until golden on all sides. Remove and set aside.
- 05In the same pot, add the garlic, rosemary, mushrooms, and pearl onions. Cook until the onions are tender.
- 06Sprinkle the flour over the vegetables and stir to coat. Cook for 2 minutes to remove the raw flour taste.
- 07Slowly pour in the reserved marinade and chicken stock, stirring constantly to create a smooth sauce.
- 08Return the chicken to the pot, ensuring it's submerged in the liquid. Bring to a simmer.
- 09Cover and cook on low heat for 1 1/2 hours, occasionally basting the chicken with the sauce.
- 10Adjust seasoning with salt and pepper to taste before serving.
