- 01Preheat your oven to 425°F (220°C).
- 02Rinse the chicken inside and out under cold running water, then pat dry with paper towels.
- 03In a small bowl, mix olive oil, salt, pepper, and minced garlic.
- 04Rub the entire chicken with the olive oil mixture, making sure to get under the skin as well.
- 05Stuff the cavity of the chicken with half of the thyme and two lemon halves.
- 06Place the chicken in a roasting pan and scatter the remaining lemon halves and thyme around it.
- 07Pour the chicken broth into the bottom of the roasting pan.
- 08Roast the chicken in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
- 09Let the chicken rest for 10-15 minutes before carving. Serve with the roasted lemon halves and juices from the pan.
