Ingredients

Pork Chops

  • 4 pieces bone-in pork chops
  • 1/2 cup bourbon
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil

  • 1 teaspoon salt

Apple Cabbage Slaw

  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 2 units Granny Smith apples julienned
  • 1/4 cup carrot grated
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. 1 In a small bowl, mix the bourbon, maple syrup, Dijon mustard, soy sauce, olive oil, black pepper, and salt to create the glaze.
  2. 2 Place the pork chops in a resealable plastic bag and pour half of the glaze over them. Seal the bag and marinate in the refrigerator for at least 1 hour.
  3. 3 Preheat the oven to 375°F (190°C).
  4. 4 Heat a large ovenproof skillet over medium-high heat. Remove the pork chops from the marinade and sear them in the skillet for 3-4 minutes on each side until browned.
  5. 5 Pour the remaining glaze over the pork chops and transfer the skillet to the oven. Bake for 15-20 minutes until the pork chops are cooked through.
  6. 6 While the pork chops are baking, prepare the slaw by combining the green cabbage, red cabbage, apples, and carrot in a large bowl.
  7. 7 In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour this dressing over the cabbage mixture and toss to combine.
  8. 8 Remove the pork chops from the oven and let them rest for 5 minutes. Serve with the apple cabbage slaw on the side.
