Ingredients
Lamb Kofta
1 lb ground lamb
1/4 cup onionfinely chopped
2 cloves garlicminced
2 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1/2 tsp cayenne pepper
1 tsp salt
1/2 tsp black pepper
2 tbsp fresh parsleychopped
Tzatziki Sauce
1 cup Greek yogurt
1/2 cup cucumbergrated and drained
2 tbsp fresh dillchopped
1 tbsp lemon juicefreshly squeezed
1 clove garlicminced
1/4 tsp salt
1/4 tsp black pepper
Instructions
1In a large bowl, combine ground lamb, onion, garlic, cumin, coriander, paprika, cayenne, salt, pepper, and parsley. Mix well until all ingredients are evenly incorporated.
2Divide the lamb mixture into 8 equal portions. Using your hands, shape each portion into an oval or log shape around a skewer.
3Cover the koftas and refrigerate for at least 15 minutes to help them hold their shape.
4While the koftas are chilling, prepare the tzatziki sauce. In a medium bowl, combine Greek yogurt, grated cucumber, dill, lemon juice, garlic, salt, and pepper. Stir well to combine.
5Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates.
6Grill the koftas for about 3-4 minutes per side, or until cooked through and nicely charred on the outside.
7Remove the koftas from the grill and let them rest for a few minutes.
8Serve the koftas warm with a side of tzatziki sauce. Garnish with additional parsley if desired.
