Ingredients

Lamb Kofta

  • 1 lb ground lamb
  • 1/4 cup onion finely chopped
  • 2 cloves garlic minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley chopped

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup cucumber grated and drained
  • 2 tbsp fresh dill chopped
  • 1 tbsp lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. 1 In a large bowl, combine ground lamb, onion, garlic, cumin, coriander, paprika, cayenne, salt, pepper, and parsley. Mix well until all ingredients are evenly incorporated.
  2. 2 Divide the lamb mixture into 8 equal portions. Using your hands, shape each portion into an oval or log shape around a skewer.
  3. 3 Cover the koftas and refrigerate for at least 15 minutes to help them hold their shape.
  4. 4 While the koftas are chilling, prepare the tzatziki sauce. In a medium bowl, combine Greek yogurt, grated cucumber, dill, lemon juice, garlic, salt, and pepper. Stir well to combine.
  5. 5 Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates.
  6. 6 Grill the koftas for about 3-4 minutes per side, or until cooked through and nicely charred on the outside.
  7. 7 Remove the koftas from the grill and let them rest for a few minutes.
  8. 8 Serve the koftas warm with a side of tzatziki sauce. Garnish with additional parsley if desired.
