Method
- 01Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente.
- 02While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- 03Add the chopped heirloom tomatoes to the skillet and cook for 3-4 minutes, stirring occasionally, until they begin to soften and release their juices.
- 04Drain the cooked pasta, reserving 1/2 cup of the pasta water. Add the pasta to the skillet with the tomatoes and toss to combine.
- 05If the pasta seems dry, add a little of the reserved pasta water to loosen it. Season with sea salt and freshly ground black pepper.
- 06Remove the skillet from the heat and gently fold in the torn basil leaves.
- 07Transfer the pasta to serving plates. Tear the burrata cheese into pieces and place on top of the pasta.
- 08Drizzle a little extra olive oil over the burrata and serve immediately.
