- 01Preheat your oven to 375°F (190°C).
- 02In a large ovenproof skillet, heat olive oil over medium-high heat. Season the chicken thighs generously with salt and pepper.
- 03Place the chicken thighs skin-side down in the skillet and sear until golden brown, about 5-7 minutes. Flip and sear the other side for another 3 minutes. Remove and set aside.
- 04Reduce the heat to medium, add minced garlic to the skillet, and sauté until fragrant, about 1 minute. Stir in the lemon zest, lemon juice, oregano, and thyme.
- 05Add the white beans and chicken broth to the skillet. Stir to combine and season with salt and pepper to taste.
- 06Nestle the seared chicken thighs back into the skillet, skin-side up, on top of the bean mixture.
- 07Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the skin is crispy.
- 08Remove from the oven and let rest for a few minutes. Sprinkle with fresh parsley before serving.
