Instructions
Make the pie crust by combining sifted flour, sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough forms. Wrap in plastic wrap and chill for 30 minutes.
Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface and fit into a 9-inch pie pan. Trim and crimp the edges. Set aside.
Prepare the apple filling by tossing sliced apples with brown sugar, granulated sugar, cinnamon, nutmeg, flour, and lemon juice in a large bowl. Let it sit for 10 minutes to release juices.
For the caramel sauce, heat sugar and water in a saucepan over medium heat, swirling occasionally until amber in color. Remove from heat and carefully whisk in warm cream, butter, vanilla, and salt. Set aside to cool slightly.
Assemble the pie by layering the apple filling into the crust. Drizzle half of the caramel sauce over the apples.
In a separate bowl, mix crushed cereal, oats, brown sugar, flour, and melted butter until crumbly. Sprinkle evenly over the apple filling.
Bake the pie in the preheated oven for 50-55 minutes or until the crust and crumble are golden brown and the filling is bubbly.
Allow the pie to cool for at least 2 hours before serving. Drizzle with remaining caramel sauce just before serving.
