Ingredients

  • 12 oz linguine
  • 1 lb shrimp peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp red pepper flakes
  • 1 cup cherry tomatoes halved
  • 1 lemon zest and juice
  • 1/2 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. 1 Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Drain and set aside.
  2. 2 In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. 3 Add the shrimp to the skillet and cook for about 2-3 minutes per side, or until they turn pink and opaque.
  4. 4 Add the cherry tomatoes to the skillet and cook for another 2 minutes until they start to soften.
  5. 5 Stir in the lemon zest and juice, followed by the cooked linguine, tossing to combine everything thoroughly.
  6. 6 Remove the skillet from the heat and add the chopped parsley, basil, and grated Parmesan cheese. Toss until the herbs are well distributed and the cheese has melted.
