Ingredients

  • 12 oz spaghetti
  • 2 pounds ripe tomatoes chopped
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic minced
  • 1 cup fresh basil leaves torn
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. 1 Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente.
  2. 2 While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. 3 Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
  4. 4 Add the chopped tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they start to break down and form a sauce.
  5. 5 Season the tomato sauce with sea salt and freshly ground black pepper.
  6. 6 Drain the cooked spaghetti and reserve about 1/2 cup of the pasta water.
  7. 7 Add the drained spaghetti to the tomato sauce in the skillet and toss to combine. If needed, add a little reserved pasta water to loosen the sauce.
