Ingredients

Main Ingredients

  • 1 block firm tofu drained and pressed
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers cut into 1-inch pieces
  • 1 cup pineapple chunks fresh or canned
  • 1/2 cup red onion cut into 1-inch pieces
  • 8 pieces wooden skewers soaked in water for 30 minutes

Teriyaki Sauce

  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger grated
  • 1 clove garlic minced
  • 1 teaspoon sesame oil

Instructions

  1. 1 Cut the drained and pressed tofu into 1-inch cubes.
  2. 2 In a bowl, mix soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil to make the teriyaki sauce.
  3. 3 Add the tofu cubes to the sauce and marinate for at least 20 minutes.
  4. 4 Prepare the skewers by threading the marinated tofu, bell pepper pieces, pineapple chunks, and red onion alternately.
  5. 5 Heat the vegetable oil in a grill pan over medium heat.
  6. 6 Place the skewers in the pan and grill, turning occasionally, until the tofu is golden brown and the vegetables are tender, about 10-15 minutes.
  7. 7 Brush the skewers with remaining teriyaki sauce as they cook for extra flavor.
  8. 8 Serve the skewers hot, garnished with sesame seeds and chopped green onions if desired.
