Ingredients

  • 4 pieces chicken breasts boneless, skinless

  • 8 ounces fresh mozzarella sliced
  • 2 medium tomatoes sliced

Balsamic Glaze

  • 1/2 cup balsamic vinegar
  • 2 tablespoons brown sugar

Instructions

  1. 1 Preheat your oven to 400°F (200°C).
  2. 2 In a small saucepan over medium heat, combine balsamic vinegar and brown sugar. Stir continuously until the mixture reduces by half and becomes syrupy, about 5-7 minutes. Set aside.
  3. 3 Season the chicken breasts with salt and pepper on both sides.
  4. 4 In a large oven-proof skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear until golden brown, about 3-4 minutes per side.
  5. 5 Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the chicken is cooked through.
